Sausage and Bacon Breakfast Muffins Recipe 

– a quick and easy to make treat that is delicious for breakfast, lunch or supper.

I’ve been doing baking of a different kind today at Cakes by Shelly HQ today –  delicious savoury Sausage and Bacon breakfast muffins.

Mr Shelly and the mini Shelly’s cannot get enough of these. Fab as breakfast on the go, a lunch box treat or even serve warm with salad and beans for a light supper. These little treats are so yummy I thought I’d share the recipe with you.

Sausage and Bacon Breakfast Muffins Recipe

Makes 12 – 15 muffins


1 tbsp olive oil

275g streaky bacon rashers (smoked or unsmoked) – roughly chopped

4 sausages – roughly chopped

250g plain flour

75g salted butter

2 tsp baking powder

1/2 tsp bicarbonate of soda

250ml buttermilk

2 medium eggs

100g strong cheddar cheese grated


1. Preheat the oven to 200oC/fan 180oC/gas mark 6. Line a 12-hole muffin tin with cake cases.

2. Heat the oil in a ban and fry off the bacon and chopped sausage. Set aside on kitchen paper to cool.

3. Combine the butter, flour, baking powder and bicarbonate of soda until it resembles breadcrumbs. In a separate bowl combine the eggs and buttermilk and beat. Pour the egg mixture over the dry ingredients until combined.

4. Fold in the sausage, bacon and cheese.

5. Spoon the mixture evenly amongst the cake cases and bake for 18-20 minutes until risen and golden or until a skewer inserted into the middle of the muffin comes out clean.

6. Serve warm or leave to cool.

Tasty Tips: Why not add some crushed garlic or some chopped onion if you prefer a slightly stronger flavour. For those cheese addicts amongst us add some grated cheese to the top of the muffins as soon as they come out the oven.
